Named after the elegant mountain antelope native to Ethiopia, this naturally processed Heirloom selection carries a quiet strength—expressive yet refined, wild yet balanced. Cultivated by smallholder farmers at elevations between 1,850 and 2,000 meters, each lot reflects generations of care and tradition passed through the heart of Ethiopian coffee culture.
The natural process allows the cherries to dry slowly under the sun, infusing each bean with the sweetness and complexity of the fruit itself. Through careful roasting, we’ve preserved the cup’s luminous clarity and lively acidity, resulting in a flavor profile that blooms with strawberry jam, orange zest, and the warmth of buttery pastry.
