Bananaquit is an award-winning expression of modern Colombian coffee processing, pairing the natural sweetness of Caturra with the experimental fermentation work of producer Julio César Madrid Tisnés at Finca Milán.
In the cup, Bananaquit leads with unmistakable banana-bread sweetness, followed by rich toffee, cocoa nibs and layers of tropical fruit and caramel. Its smooth body and restrained acidity give the coffee remarkable approachability while its fermentation-driven aromatics make it anything but ordinary.
Finca Milán is a family-owned farm in Pereira, Risaralda and one of Colombia's notable centers for experimental coffee processing. Led by third-generation producer Julio César Madrid Tisnés, the farm has invested heavily in fermentation infrastructure, microbial research and controlled processing techniques designed to explore how microorganisms can shape flavor in coffee.
Bananaquit uses Finca Milán's Culturing Nitro fermentation process, combining controlled microbial fermentation with a nitrogen-managed environment. The result is an intensely expressive coffee with pronounced sweetness and fruit character while retaining the structure and clarity necessary for the coffee itself to remain recognizable.
That balance proved itself in competition.
At the 2026 Golden Bean Americas, Bananaquit earned Gold in Single Serve and Silver in Experimental Process Filter, demonstrating its ability to remain expressive across dramatically different brewing formats.
For us, Bananaquit represents exactly what experimental processing can accomplish when it is used with intention: not novelty for novelty's sake, but processing that reveals an extraordinary and memorable expression of the green coffee.

The coffee definitely has banana notes and a very interesting profile given its unique processing and fermentation. For the price, I would consider it mainly an expensive novelty, but not necessarily good for daily or regular drinking.
I've greatly enjoyed the other co-ferments from Sacred Beans, and this one is no exception. The cup itself is a smooth experience, very well rounded in body and overall flavor profile. The star though is the banana, which presents as a banana bread with chocolate chips. A very nice change of pace from your daily driver, would recommend for those who enjoy banana!
